The Art of Meal Prepping
It’s no secret that I’m basically THE worst when it comes to getting into a routine of working out and sticking to it. I feel like sometimes my life is a never ending cycle of new years resolutions I’m perpetually breaking. If you're like me, I’ve tried no dairy, no carbs, no meat, no eating after 7, no cream based anything, all liquid, cleanses, and all natural. Let’s be real, diets suck but I'll tell you in my experience, the one thing that actually has worked for me is meal prepping. If meal prepping isn't your thing, you can always do what some of my friends do and just crock pot literally everything, which I’ll post on soon.
While I wait for my next wave of motivation to kick in (1. When it's warm enough outside that I don't turn into an ice cube from running, and 2. when the fog isn’t eating me alive) I'll share with you what I do meal prep wise to stay on track.
- 1 portion protein (usually chicken or ground turkey)
- 1 portion veggie
- 1 portion simple carb
Below is my one of my favorite chicken recipes which you can pick up almost all of the ingredients from the local Trader Joes or any other grocery store. It's also great for meal prepping because it's easy to cook in bulk and portion everything out and make it last for several days. Most importantly though, it's not boring or bland.
Spicy Chicken Breast Strips
Combine the following in a large pan:
- 2 Tbsp molasses (optional)
- Tapatio (or any other hot sauce you love) to taste
- balsamic vinegar
- fresh jalapeño
- half cup water
Put in chicken (frozen is okay), boil, when the chicken is about half way cooked through, put chopped bell pepper, red onion, and cilantro on top and finish cooking. Its DELISH!
