Celebrate with Friends - Recipe

I Hope everyone had an amazing 4th of July holiday weekend! It's one of my favorite holidays because of the cookouts, the fireworks, and everything else that goes with it. I posted some pictures from the celebration below.

I also wanted to share a recipe for a potato salad that I came up with being the southern gentleman that I am. Best of all, it passed the most important test of all, none left over (I think because there is bacon involved)! JV's Southern Summer Potato Salad:

Ingredients: 

  • Potatoes (I get the "Teeny Tiny" potatoes from Trader Joes so they are faster to boil)
  • 2 Celery stalks (very finely chopped)
  • Sweet relish
  • 1/2 Sweet onion (very finely chopped)
  • 3 Eggs (hardboiled) (very finely chopped)
  • Bacon (chop into bacon bit size)
  • Mayonaise (to taste)
  • Yellow mustard (to taste) - I like more mustard than mayo
  • Garlic salt (to taste)

Instructions:

  • Boil potatoes for 10-15 minutes so they aren't too soft and let cool
  • Hard boil 3 eggs and set aside to cool
  • Skin potatoes (or keep skin if you like)
  • Mix in all above ingredients with chopped potatoes
  • Refrigerate
