Thanksgiving Creations - Recipe
Thanksgiving is such an incredible time to gather, reflect, and give thanks to those around you who are a valuable part of your life. A huge part of that, of course, is the food! If you're like me, when I think about my favorite Thanksgiving celebrations, it also includes memories of my favorite foods.
If you are looking for the perfect dish to bring to this years Thanksgiving festivities, you should try your hand at my all time favorite casserole my Granny used to always make during the holidays, AND that one of my very best friends and I used to make in grad school when we couldn't be with our families on the holidays. It's easy, super tasty, and it's always a crowd favorite.
What You Need:
- 1 lb bag of shredded hash browns
- 10 oz light sour cream
- 6 oz shredded cheese (your choice, but I use cheddar or Mexican blend)
- 8 table spoons unsalted butter
- 1 sleeve of Ritz crackers crumbled for crust
- Sweet onion finely chopped to to taste
- 1 can of cream of chicken or mushroom
Prep Time: 30 minutes
Cook Time: 15-20 minutes
Serving Size: 4-5 people
Step 1: Let hash browns thaw
Step 2: Mix hash browns, sour cream, cream of chicken, and onion until hash browns are evenly covered. (If you want, you can also get creative and add shredded chicken, your favorite herbs, or use dairy/butter alternatives depending on your dietary needs)
Step 3: Melt butter and combine with crackers
Step 4: Put a half inch layer of hash brown mix in casserole dish
Step 5: Put a light layer of cheese
Step 6: Continue to layer until you run out of hash brown mix
Step 7: The last layer will be your buttery cracker mix
Step 8: Bake in oven at 425 degrees for 15-20 minutes until crust is golden brown.
